Potatoes

What to do with a box of potatoes???

Our Home Teachers brought us a box full of potatoes. Does anyone know how long they will last, or how I should store them?? Or do you have any great ideas on what to make with them? I would love any and all ideas. This is what we have come up with so far.

Homemade battered french fries - they turned out really good, but only uses 1 maybe 2 potatoes.
I made 4 pans of cheesey (funeral) potatoes and froze them. I will probably make a couple more pans - I have 2 sisters that are going to have babies in the next couple months and this can be part of a meal for them.
I have barely made a dent in the box of potatoes so send me your favorite potato recipes or ideas on how to use these things.

Okay, potato ideas {I LOVE potatoes}:
1. Boil potatoes at night & put them in the fridge. The next morning grate them for AWESOME hashbrowns.
2. Grate a boiled potato into taco meat, it stretches it and tastes yummy too.
3. Spudnuts
4. Twice baked
5. Baked potato soup
6. Baked potato w/ chili
7. Dutch oven potatoes

PS they should keep for quite awhile if you can keep them in a cool dark place.

Also, keep the potatoes covered in your cool dark place (we use an old blanket or towel) and they will last a couple of months! Yummy, I love my carbs too!

We keep boxes of potatoes most of the winter down in our storage room. Cold, dark...that's the secret, but not so cold that it freezes them. You'll use them up in roasts etc... and your french fries look yummy. What recipe did you use for the batter?

Baked Potatoes are always yummy, Caleb makes mashed potatoes puts them in pan and puts lots of cheese on top- it is very very yummy, or just mashed potatoes if your like those, twice baked potatoes I saw on rachael ray where you cut them in half-bake-take out all the insides mix it with chili or chives whatever you want and put it back in the skins and cook it again. they were good too. good luck that's a lot of potatoes.

I was wondering how you keep so skinny and now with the potato questions I think I have figure out the food to leave behind. We eat A LOT of potatoes.

You already have some great ideas. I was going to suggest hashbrowns, too. You should go into business. I went to both Walmart and Albertsons a few days before Christmas and they were both completely sold out of hashbrowns. You wouldn't think that would be a problem in Idaho. So there's a new business opportunity for you!

I am not a huge potato fan, but I do love cheesey potatoes and french fries, so keep up the good work! you can do it!
